We began with one nonna, one kitchen and a stubborn belief that Italy is best understood with your hands. Nearly three decades later we still work the same way: no scripted demos, no bus tours, no thirty strangers behind a rope.

You shop the market at seven. You roll, fold and taste until midday. You eat what you made where it was grown — and then, because it is Italy, you eat a little more.
